Applesauce Cake

Ingredients
  • 1 c butter, softened
  • 1-1/2 c sugar
  • 2 eggs
  • 2 c applesauce, unsweetened
  • 4 c flour
  • 2 t baking soda
  • 1 t salt
  • 1 t cinnamon
  • 1/2 t nutmeg
  • 1 c nuts, coarsely chopped
  • 1 c raisins or dates, coarsely chopped
Instructions
  1. Preheat oven to 325°. Grease two 9″ x 1-1/2″ loaf pans.
  2. Cream butter and sugar until fluffy.
  3. Add eggs and applesauce and beat well.
  4. Combine dry ingredients, stir well, adding nuts and raisins.
  5. Pour mixture into two prepared loaf pans.
  6. Bake one hour or until toothpick inserted in center comes out clean.
  7. Cool in pans 30 minutes, then turn onto cake rack and cool completely.
  8. Frost with your favorite orange or vanilla icing.
