Baked Apples with Fresh Mint

  • 4 New England Red Delicious apples
  • 1/2 c raisins
  • 1/4 c brown sugar
  • 1 T fresh mint, minced
  • 2 t margarine
  1. Preheat oven to 350˚. Core apples and peel a 1″ strip around the hole on the top of each apple. Place apples in a shallow baking dish.
  2. Combine raisins, brown sugar, and mint. Fill apples with this mixture. Top each with 1/2 t margarine.
  3. Bake for 50 minutes or until apples are tender.
