Baked Apples with Fresh Mint
- 4 New England Red Delicious apples
- 1/2 c raisins
- 1/4 c brown sugar
- 1 T fresh mint, minced
- 2 t margarine
- Preheat oven to 350˚. Core apples and peel a 1″ strip around the hole on the top of each apple. Place apples in a shallow baking dish.
- Combine raisins, brown sugar, and mint. Fill apples with this mixture. Top each with 1/2 t margarine.
- Bake for 50 minutes or until apples are tender.
