Citrus Berry Sherbet

  • 1 envelope unflavored gelatin
  • 1 c fresh orange juice
  • 1 t lemon zest
  • juice of 1 lemon
  • 2 T sugar
  • 1/2 c applesauce
  • 1 1/2 c mashed strawberries or boysenberries
  1. In saucepan, soften gelatin in orange and lemon juice. Add lemon zest and sugar.
  2. Stir over low heat until gelatin and sugar are dissolved. Cool.
  3. Stir in applesauce and berries. Pour into shallow pan.
  4. Freeze until firm, about 4 hours.
