Citrus Berry Sherbet
- 1 envelope unflavored gelatin
- 1 c fresh orange juice
- 1 t lemon zest
- juice of 1 lemon
- 2 T sugar
- 1/2 c applesauce
- 1 1/2 c mashed strawberries or boysenberries
- In saucepan, soften gelatin in orange and lemon juice. Add lemon zest and sugar.
- Stir over low heat until gelatin and sugar are dissolved. Cool.
- Stir in applesauce and berries. Pour into shallow pan.
- Freeze until firm, about 4 hours.
