Crispin Apple Lemonade Pie

Crispin (Mutsu) is an excellent dessert apple and is considered especially good in salads. It has a sweet, light flavor cooked, and it holds its shape well. They can grow quite large – this pie recipe featuring Mutsu apples may require as few as three apples.
  • 1 9-inch deep-dish pie shell, frozen
  • Filling:
  • 6 c Mutsu apples, peeled, cored, and sliced
  • 1/3 c frozen lemonade concentrate, thawed
  • 3 T sugar
  • 1 T cornstarch
  • Streusel topping:
  • 1 c flour
  • 2/3 c sugar
  • 1/2 t salt
  • 1/2 t cinnamon
  • 1/2 c cold butter, cut into 1/2-inch pieces
  1. Keep pie shell in freezer until ready to fill. Preheat oven to 400°.
  2. In large bowl, combine apples and lemonade concentrate. Add sugar and cornstarch, then toss to combine.
  3. Fill frozen pie shell and smooth the top. Bake for 25 minutes.
  4. While pie is baking, make streusel by combining dry ingredients in food processor. Pulse several times to mix. Add butter and pulse until mixture resembles fine crumbs. Refrigerate.
  5. With a spatula, slide baked pie onto a foil-covered baking sheet. Reduce heat to 375°.
  6. Carefully place streusel on center of pie, spreading evenly to the edges. Tamp down gently to compact crumbs.
  7. Continue baking until juices bubble around edges, 30-35 minutes.
  8. Use a spatula to slide pie to a cooling rack. Let cool for at least one hour before slicing.
