Crispin (Mutsu) is an excellent dessert apple and is considered especially good in salads. It has a sweet, light flavor cooked, and it holds its shape well. They can grow quite large - this pie recipe featuring Mutsu apples may require as few as three apples.
- 1 9-inch deep-dish pie shell, frozen
- 6 c Mutsu apples, peeled, cored, and sliced
- ⅓ c frozen lemonade concentrate, thawed
- 3 T sugar
- 1 T cornstarch
- 1 c flour
- ⅔ c sugar
- ½ t salt
- ½ t cinnamon
- ½ c cold butter, cut into ½-inch pieces
- Keep pie shell in freezer until ready to fill. Preheat oven to 400°.
- In large bowl, combine apples and lemonade concentrate. Add sugar and cornstarch, then toss to combine.
- Fill frozen pie shell and smooth the top. Bake for 25 minutes.
- While pie is baking, make streusel by combining dry ingredients in food processor. Pulse several times to mix. Add butter and pulse until mixture resembles fine crumbs. Refrigerate.
- With a spatula, slide baked pie onto a foil-covered baking sheet. Reduce heat to 375°.
- Carefully place streusel on center of pie, spreading evenly to the edges. Tamp down gently to compact crumbs.
- Continue baking until juices bubble around edges, 30-35 minutes.
- Use a spatula to slide pie to a cooling rack. Let cool for at least one hour before slicing.
