Apple Meatloaf

  • 1 lb ground beef
  • 1 medium PaulaRed or Ginger Gold apple, peeled, and finely chopped
  • 1 medium potato, peeled, and finely chopped
  • 1 small onion, minced
  • 1 t salt
  • 1/4 t pepper
  • 1 egg, beaten
  1. Thoroughly mix the ground beef and the potato, apple, and onion.
  2. Mix in the salt and pepper, then the beaten egg. Pack firmly into a greased 8-inch loaf pan.
  3. Bake in 375° oven for about 1 hour. Serve hot with a generous amount of pan juices.
