Crunchy Apple Stir-Fry

  • 1 1/2 t vegetable oil
  • 1/2 c onion, vertically sliced
  • 1 c (2 medium) carrots, thinly sliced
  • 1 t dried basil, crushed
  • 1 c fresh Chinese pea pods
  • 1 T water
  • 1 New England apple, cored and thinly sliced
  1. Stir-fry onion, carrots, and basil in oiled skillet until carrots are tender.
  2. Stir in pea pods and water; stir-fry 2 more minutes.
  3. Stir in apples and remove from heat. Serve hot.
