Rubens is a medium to large, conical apple, mostly red with yellow streaking. It has thin skin and light-crisp, juicy, cream-colored flesh with a green tinge. Its flavor is sweet with light tartness, and it is good for all purposes. This late-season apple stores well.


Rubens was developed by crossing Gala and Elstar in 1985 by the Consorzio Italiano Vivaisti, a growers' consortium in Ferrara, Italy. Rubens was subsequently released to the commercial market in 2003. Rubens is not to be confused with an apple of the same name from the Netherlands developed in 1954 from a cross of Cox's Orange Pippin and Reinette Etoilée
