Louise’s Apple Orange Salad
- 2 Cortland or other New England apples, cored and sliced thinly
- 1 can (11 oz) mandarin oranges, drained
- 1/2 c frozen orange juice concentrate
- 4 c salad greens
- 1/4 c vegetable oil
- salt and pepper
- pecans, toasted and chopped
- Combine apple slices with oranges and frozen concentrate.
- Before serving, toss with salad greens and oil, and season to taste.
- Sprinkle with toasted pecans.
