Louise’s Apple Orange Salad

  • 2 Cortland or other New England apples, cored and sliced thinly
  • 1 can (11 oz) mandarin oranges, drained
  • 1/2 c frozen orange juice concentrate
  • 4 c salad greens
  • 1/4 c vegetable oil
  • salt and pepper
  • pecans, toasted and chopped
  1. Combine apple slices with oranges and frozen concentrate.
  2. Before serving, toss with salad greens and oil, and season to taste.
  3. Sprinkle with toasted pecans.
